A young woman wearing a red and blue T-shirt and short skirt walks barefoot through a golden layer of unhusked rice that is spread out on a mat to dry in the sun. While it is drying, newly harvested rice must be guarded from birds and rotated on the mats so that all grains dry thoroughly.
In Bali, rice is harvested with knives by hand in teams. Farmers then thrash it (remove grains from the stems) on mats in the fields. Next, the rice often is carried from the fields in sacks and laid out on roadside mats to dry before it is milled (the husks are removed from the grain).
